Cucumber Roll Hors D'Oeuvres with Creamy Avocado Spread

This is one of my favorites! If you're a fan of cucumbers and avocado, then you'll love digging into these!

~ 1 large organic English cucumber (or 2)
~ 3 ripe avocados
~ 1/4 cup capers
~ 1/2 teaspoon pink Himalayan salt or sea salt
~ Freshly cracked black pepper
~ 2 tablespoons of freshly squeezed lemon juice
~ 1/4 cup fresh parsley, chopped fine + more for plating
~ 1/8 cup fresh dill, chopped fine


1. Slice cucumbers thin.
2. Mash all other ingredients together and spread about a tablespoon on each slice.
3. Roll up cucumber with spread and garnish with capers and fresh chopped parsley.
4. Enjoy cucumber and avocado nirvana!

Tilapia With Black Beans and Corn

Tilapia With Black Beans and Corn - Simple, Healthy and Delicious!

1 can (15oz) Black Beans, drained, rinsed

1 can (10 oz) Diced Tomatoes & Green Chilies, drained

1 cup frozen whole kernel corn

1/3 cup sliced green onions

2 tablespoons vegetable oil

1 tablespoon cider vinegar

No-Stick Cooking Spray

4 tilapia fillets, thawed if frozen (4 fillets = 1 pound)


1. Stir together first 6 ingredients to make black bean-corn mixture; set aside.

2. Spray 10-inch nonstick skillet with cooking spray; heat over medium-high heat. Srpinkle fillets with salt, place in skillet and cook 3 minutes. Turn fillets over; cook 2 to 3 minutes more or until fish flakes easily with fork (145°F).

3. Place fillets on plates and top each with about 3/4 cup black bean mixture.

Cook's Tips
To thaw fish more quickly, place wrapped fish in container of cold tap water and change water every 20 to 30 minutes. Individually wrapped fillets will thaw more quickly than pieces frozen together.

Makes 4 servings (1 topped fillet each)

Canned Chicken Parmesan Balls

There's nothing better than classic Italian food! However, the calories sometimes make it less appealing. Here is a healthier alternative to Chicken Parmesan! Try them and let me know how you like them in the comments section below. Buon Appetito!


2 cans chicken, drained
2 large eggs
1/2 cup reduced-fat mozzarella cheese
8 tablespoons grated parmesan cheese
8 tablespoons wheat germ
1/4 cup tomato sauce
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon parsley
1/2 teaspoon crushed red pepper

1. Combine all your ingredients into a bowl and mix ingredients together until everything is incorporated.
2. Coat baking sheet with nonstick cooking spray, and shape your mix into about 7-8 balls.
3. Bake in preheated 350 degree oven for about 20-25 minutes.

Ready for a Healthy Sweet Treat?

My clients ask me if I ever eat sweets. The answer is yes. I like ice cream as much as the next person! However, I try to satisfy my sweet tooth with healthy treats. Here's a little something for your sweet tooth! Whether or not you're a fan of caramel apples, I'll bet you will be a fan of Caramel Apple Grapes!



~ 1 cup caramel pieces
(I used the squares & used a "rounded" cup measurement)
~ 2 tablespoons heavy cream
~ Seedless green grapes
~ 1 cup unsalted peanuts, crushed (or you can use salted)
~ Toothpicks


~ Poke a toothpick in the top of as many grapes as you want to use.
~ Set aside.
~ In a small saucepan, over medium-low heat, combine the caramel and cream.
~ Stir constantly until melted.
~ Reduce heat to lowest setting just to keep it warm.
~ Place the crushed peanuts in a shallow dish.
~ Dip/roll the grapes into the caramel sauce and then roll in the crushed peanuts.
~ Place on a sheet of waxed paper to set and cool.

Superpower Trout Almandine

My clients are always asking me about my diet. They want to know what I eat for breakfast, lunch and dinner, what are my favorite recipes and beverages and what snacks I prefer.

Starting today, I'm going to share some of my favorite, healthy, go-to recipes. I hope you enjoy them! 

Morgan S. Earp

- 2 small trout
- 1/4 cup white wine
- 3/4 teaspoon butter
- Juice of 1/2 lemon
- 1/8 cup slivered almonds
- 1 tablespoon fresh parsley, chopped

1. Braise trout in white wine until done.
2. Remove trout and drain off fat.
3. In the skillet, add butter, lemon juice and almonds and saute until lightly browned.
4. Mix in chopped parsley and pour almond mixture over trout.
5. Serve immediately.

Total Carb - 5 g
Protein - 26 g
